Haute cuisine recipes set in vegan versions

Designed to satisfy even the most discriminating palates, “The 30-Minute Vegan’s Taste of Europe: 150 Plant-Based Makeovers of Classics from France, Italy, Spain ... and Beyond” (Lifelong Books, $18.99) delivers with a series of animal-free versions of well-loved European dishes. Award-winning author and chef Mark Reinfeld tackles the meaty fare that is European cuisine, offering inspired plant-based versions of everything from manicotti to French onion soup, moussaka to “notwurst.”

Reinfield re-imagines traditional favorites from eight regions — France, Germany, Greece, Ireland, Italy, Portugal, Spain and the United Kingdom. Organized by country, recipes range from appetizers and entrees to sides and desserts and include everything from the staples — such as Buono Apitito Pesto Risotto, French Onion Soup and Blueberry Blintzes — to recipes for special occasions — like saffron Quinoa Pilaf, Seitan Bourguignon and Chocholate-Stuffed Figs.
